Vegetarian Sauerkraut


I love sauerkraut! I always loved sauerkraut but since my mom recipe includes ham, italian sausages and bacon, I had to make my own recipe. A recipe that is veggie and healthy!


Ingredients

  • 1 lb sauerkraut, rinsed
  • 1 onion, minced
  • 3 ts olive oil
  • 1 cup white wine (or beer)
  • 2 apples, diced
  • 10 juniper berries
  • 3 dried cloves
  • 250 ml vegetables broth
  • 454 g tofu, diced and marinated in salted water
  • 6 tofu sausages
  • 6 potatoes, cooked

First, cook the onion in a big pan with the olive oil. Add the sauerkraut and cook for 5 minutes. Add the white wine, juniper berries, cloves and apples and the broth. Cook for 2 hours at medium. Add the tofu and the sausages and cook for another hour. Add the potatoes 15 minutes before serving.

Tofu Bourguignon

Beef bourguignon is tasty and comforting, reminds me of childhood. However, it is made with beef.... Here's an adapted version of this meal with tofu.



Ingredients

  • 112 g de mushrooms
  • 1 onion, minced
  • 1 garlic cloves, minced
  • 450g tofu, diced and sautéed
  • 2 tbs olive oil
  • 200 ml tomato, diced
  • 160ml water
  • 40 ml tomato paste
  • 1 tbs tamari
  • 2 tbs red wine
  • 1 ts paprika
  • 1 ts  chili powder
  • salt and pepper

First of all, you have to prepare all the ingredients (cut the veggies, sautéed the tofu). Then cook the mushrooms, onions and garlic with the oil in a large pan sauce.

Add the red wine to deglaze the pan and add the other ingredients. Cook for 15 minutes.

Quinoa and Tofu Stir-Fry

Here is a really healthy recipe with quinoa and tofu. Quinoa has proteins and iron so you don’t need to eat meat when you eat it. You can find it at the grocery store, usually with the rice or with the lentils and beans.
