Lentil Shepherd's Pie

It is like the same old shepherd’s pie recipe but without the meat ! Really good and quite simple! Lentils are really good and contain proteins, vitamin B and iron. They contain no fat and help lower cholesterol. They also are cheaper than meat!


Ingredients:

  • 2 cups cooked lentils
  • 1 chopped onion
  • soy sauce
  • 3 to 4 big potatoes
  • some soy milk
  • 2 cans of corn or a small bag of frozen corn
  • salt and pepper
  • canola oil

Cook your potatoes in boiling water for about 20 minutes and them mash them with the soy milk. Add some salt and pepper.

In a saucepan, heat the oil and cook the onion. Add the cooked lentils and soy sauce.

Now, in a pan, put the lentils and onion, then add the 2 cans of corn and finish by spooning the mashed potatoes on the top. If you want some colors, sprinkle the top with paprika. Bake in the over at 350 degrees F for 20 minutes.
