Easy Seitan recipe

You may find hundreds of different recipes of seitan online. Some contains more then 10 ingredients and instructions are really complicated and strict. However, it can be quite easy to make your seitan at home with really simple ingredients and only a few easy steps to follow.

  • First, you need flour and water to make a consistent pasta dough.
  • Mix them together and knead for about 15 minutes to help gluten production, and put aside for about 10 minutes.
  • Now, you need to rinse your dough to only keep the gluten. Easiest way is to knead the dough under water in a colander. If you watch the color of the water, you’ll know exactly when the starch is gone from your dough. The water will then be clear. Until then, the water will be milky.
  • Now that you have a gluten dough, you need to cook it. Put it in a pot with water, garlic, soya or tamari sauce and spices. Make sure there is enough water because the gluten will expand while cooking. Do not boil the gluten. It takes about 45 minutes to cook.
When it’s cooked, you can keep it 3 days in the fridge or 3 months in the freezer.
